Latte
Latte, and the small ones
The biggest and mildest of the milk drinks. Common café practice; Ascaso gives no recipe.
- Pull a double shot into a 240 to 300 ml glass or cup.
- Switch to steam and purge until it spurts.
- Texture about 200 ml of cold milk in a 500 to 600 ml jug, a little longer than for a flat white.
- Sink the tip and swirl to 55 to 65 °C. Knob shut, steam off.
- Pour slowly, finish with about 1 cm of foam, then cool the thermoblock.
Cortado: a double shot with about the same amount of lightly textured milk, in a small glass. Macchiato: a shot "marked" with a spoonful of foam.
