Latte
Latte, and the small ones
The biggest and mildest of the milk drinks. Common café practice; Bezzera gives no recipe.
- Pull a double shot into a 240 to 300 ml glass or cup.
- Burst the steam tap, then bring up about 200 ml of cold milk in a 500 to 600 ml jug.
- Stretch for 3 to 5 seconds.
- Sink the tip and spin to 60 to 65 °C. Let go of the tap.
- Tap, swirl, pour slowly, then bring the jug down to finish with about 1 cm of foam.
Cortado: a double shot with about the same amount of lightly stretched milk, in a small glass. Macchiato: a shot "marked" with a spoonful of foam.
