Steam milk
Steam milk, and hot water (the manual)
The manual's steps.
- Open the steam lever briefly first, so milk is not sucked back into the boiler.
- Put the steam tip into the milk.
- Press the lever down and hold it, or lift it to lock it open. More opening gives more steam.
- Let the lever go back to the centre and take the jug away.
- Wipe the wand with a damp cloth straight away.
- For hot water, hold a cup under the nozzle, press the right lever down, and let go to stop.
Stretch, then spin
How to texture milk on the BZ10's 2-hole tip. Common practice; the temperature is La Marzocco's.
- Give the steam tap a short burst to clear the water, as the manual says.
- Fill a cold metal jug a third full with milk straight from the fridge and raise it round the tip.
- With the tip just under the surface, press the tap: a soft hiss lets air in. Lower the jug as the milk grows.
- Raise the jug so the tip is deeper and the milk turns.
- Let go of the tap at 60 to 65 °C, when the jug is too hot to hold, then take the jug away. Wipe the wand at once.
