A smaller, stronger milk drink with a thin, glossy top. Common café practice; Breville's milk steps.

  1. Pull a double shot, or a ristretto, into a 150 to 180 ml cup.
  2. Turn to STEAM over the tray; when ready, back to STANDBY.
  3. Steam about 120 ml of cold milk, with the tip at the surface only briefly, then sunk.
  4. Keep it spinning to about 60 °C, until it shines like wet paint.
  5. STANDBY, tap, swirl, and pour low and fast into the middle, leaving a top under 1 cm thick.
