Flat white

Flat white, as near as the frother gets

A flat white wants fine, thin foam. The Dedica's frother makes either froth or plain hot milk, so this uses the manual's HOT MILK setting for a thin top. Common café practice; De'Longhi gives no flat white.

  1. Run a 2-cup shot into a 150 to 180 ml cup.
  2. Press the steam button and push the ring up to HOT MILK. Purge when the light is steady.
  3. Steam about 100 g of cold milk with the frother held deep and still, to about 60 °C.
  4. Turn to ○, tap and swirl, and pour into the middle, leaving a thin top. Then cool the boiler.
