Flat white

A smaller, stronger milk drink with a thin, glossy top. Common café practice; ECM gives no recipe.

  1. Pull a double shot, or a ristretto, into a 150 to 180 ml cup.
  2. Purge the wand into the tray.
  3. Stretch about 120 ml of cold milk for only 2 to 3 seconds.
  4. Sink the tip and spin to about 60 °C, until it shines like wet paint. Close the lever.
  5. Tap, swirl and pour low and fast into the middle, leaving a top under 1 cm thick.
