Latte

Latte, and the small ones

The biggest and mildest of the milk drinks. Common café practice; ECM gives no recipe.

  1. Pull a double shot into a 240 to 300 ml glass or cup.
  2. Purge the wand into the tray.
  3. Stretch about 200 ml of cold milk, a third of a large jug as ECM says, for 3 to 5 seconds.
  4. Sink the tip and spin to 60 to 65 °C. Close the lever.
  5. Tap, swirl, pour slowly, then bring the jug down to finish with about 1 cm of foam.

Cortado: a double shot with about the same amount of lightly stretched milk, in a small glass. Macchiato: a shot "marked" with a spoonful of foam.
