Steam milk

Steam milk (the manual)

The manual's steps.

  1. Open the steam knob briefly with the wand over the drip tray, to clear the water out.
  2. Fill the jug no more than half full and put the tip in the milk.
  3. Turn the steam knob to steam: further gives more.
  4. Close the knob and take the jug away.
  5. Open the knob again for a few seconds, so milk is not sucked back into the boiler.
  6. Wipe the wand straight away with a damp cloth.

The steam gauge dropping from about 1.8 towards 1.4 bar while you steam is normal (owner report). For drier or wetter steam, change STEAM POWER in the app.

Stretch, then spin

The manual leaves the technique to you; this is La Marzocco's own steaming guide.

  1. Open the steam knob for a moment over the tray to clear condensed water, as the manual says.
  2. Fill a cold metal jug no more than half full of milk straight from the fridge. The supplied jug suits one drink.
  3. Put the tip just under the surface, tilt the jug slightly and open the right knob. A few seconds of soft hiss lets air in.
  4. Raise the jug so the tip goes deeper and the milk turns in a whirlpool.
  5. Close the knob at 60 to 65 °C, when the jug gets too hot to hold.
  6. Purge the wand and wipe it at once. Tap the jug and swirl until glossy.
