Latte

Latte, and the small ones

The biggest and mildest of the milk drinks. Common café practice; La Pavoni gives no recipe.

  1. Pull a shot, or two pulls, into a 240 to 300 ml glass or cup.
  2. Clear the water from the steam pipe.
  3. Stretch about 200 ml of cold milk in a 500 to 600 ml jug, for 3 to 5 seconds.
  4. Sink the tip and spin to 60 to 65 °C.
  5. Pour slowly, then bring the jug down to finish with about 1 cm of foam.

Cortado: a shot with about the same amount of lightly stretched milk, in a small glass. Macchiato: a shot "marked" with a spoonful of foam.
