The manual's pull
Prepare the holder (the manual)
The manual's steps.
- Fit the small basket for 1 cup or the large one for 2, and leave the holder in the group while the machine heats, so it warms too.
- Before the first coffee, lift the lever fully and run a cup of hot water through, to heat the group, the holder and the basket.
- Fill the basket with 1 scoop of finely ground coffee per cup, tamp it, and clean the rim.
- Hold the lever handle to steady the machine, and lock the holder in by turning it slightly from right to left.
- Put the cups under the spouts.
There is no pump and no brew-pressure setting. The piston and your arm make the pressure.
Lift, hold, press (the manual)
Still the manual.
- Raise the lever while you hold the holder handle with your left hand to steady the machine.
- Hold the lever up for a few seconds.
- Lower it as far as it will go to make the coffee. The manual: press in proportion to the resistance you feel.
- Repeat for more coffee, as you want it.
- Wait a few seconds for the pressure to go, then take the holder out slowly, from left to right, pressing lightly down.
- Leave the lever down at rest, so water left in the boiler does not leak out of the group.
The manual says water dripping from the holder after a coffee is normal. A coffee that is pale and weak is ground too coarse; dark and strong with little froth, too fine.
