Steam milk
Steam on, purge, froth, purge
- Press the steam button. The heating lamp comes on.
- When it is hot, open the steam valve for about 5 seconds to blow out water. Do this twice more, about 10 seconds apart.
- Froth the milk. Have it ready, because steam heating stops by itself after about 5 minutes.
- Switch steam off. Purge the wand into the drip tray and wipe it with a damp cloth at once.
Stretch, then spin
The manual's "froth milk like a barista", with the temperature from La Marzocco's steaming guide.
- Fill a narrow metal jug of at least 350 ml a third full with cold milk, 3.5 % fat or less.
- Open the steam valve for about 5 seconds to blow out the water.
- Put the tip just under the surface in the middle of the jug and open the valve slowly.
- Hold still: a light sucking sound means air is going in. Lower the jug as the milk rises, then sink the tip to spin the milk.
- Close the valve when the jug is too hot to hold, about 60 to 65 °C. Purge and wipe the wand.
- Tap the jug and swirl it until the milk is glossy.
