A smaller, stronger milk drink with a thin, glossy top. Common café practice; Quick Mill gives no recipe.
- Pull a double shot, or a ristretto, into a 150 to 180 ml cup.
- Purge the wand and swing it out.
- Stretch about 120 ml of cold milk only briefly, 2 to 3 seconds of hiss.
- Sink the tip and roll it to about 60 °C, until it shines like wet paint. Switch off.
- Tap, swirl and pour low and fast into the middle, leaving a top under 1 cm thick.
