Stretch, then spin
How to texture milk with the Giotto's big boiler. Common practice; the temperature is La Marzocco's.
- Open the steam knob for a moment over the tray to clear the water.
- Fill a cold metal jug a third full with milk straight from the fridge.
- Put the tip just under the surface and open the knob: a soft hiss lets air in. Lower the jug as the milk grows.
- Raise the jug so the tip is deeper and the milk turns.
- Close the knob at 60 to 65 °C, when the jug is too hot to hold.
- Wipe the wand, purge it, wipe again (the manual), then tap and swirl the jug.
